This has been my experience too. V/P do not come close to the Cosmo. I think the Cosmo sounds like a good option for the OP. I no longer stay at Encore/Wynn after a terrible experience with an Encore "Tower" suite.
Agreed - the Cosmo looks more up my alley - the V/P feels a little stuffy for my taste.
Going to book the Cosmo as a refundable option then see if the Wynn hosts can hook me up with a comp for the time there - but with Uncorked plus Interop its going to be a bit tight methinks.
