Pack and wear warm clothes and don't worry about it. This winter has actually been mild and less snowy than the previous two (at least in Germany). What were you planning on doing in Poland and Turkey that would have you spending large amounts of time outdoors?
Seeing the sights including driving around, and when I checked recently, one of the highways in Turkey I was going to drive was closed because of the snow.
