The visa actually states that it is sponsored by EK. But I cannot see why the UAE would object to your changing your plans and flying out on EY. It must surely happen all the time.
That's what I think too, but looking for first-hand experience. I'm sure all can agree UAE visa rules are not "intuitive" for the most part.
