120 minutes is more than enough. I am not sure if MUC still has ducks by the way. 90 minutes is also OK. MUC is not that big of a lounge.

5 hours in Frankfurt? You could go into town depending on what time of year it is and what the weather is like- easy with the S-Bahn in the basement of the airport. Afterwards FCT is perfect.

As suggested above it is not a bad idea to see Frankfurt. Zurich I assume it will be evening- so again depending on the time of year you could grab a quick look at the city however if you are tired you may want to just relax at the airport. The day rooms are nothing special by the way.

Or would we need to check-in at each lounge? Also how would checked-luggage work, especially in Zurich, do we need to collect or would it pass thru?
All 3 boarding passes at Munich. Luggage checked through to Bangkok.
