Yes, reservations in advance are needed. On two occasions the restaurant we were trying to reserve was booked so we made it for the following day. When you check in they give you a pamphlet of when each restaurant is available. You don't need to make reservations very far in advance, just the day of or the day before.
We went white water rafting through Issys Tours and Miravalles Green Adventure through Eco Explorer. Both were solid. The rafting has some pretty big rapids, so keep that in mind.
Awesome, thanks for the information. It looks like my upgrade chances are pretty low as spg.com says the hotel is sold out for 2 out of the 5 nights I am going to be there. Pretty unfortunate as I was looking forward to a small upgrade.
