My opinion - I wouldn't stay at the Signature if it's your husband's first time in Vegas. This was a very nice property when it opened, particularly for people who wanted a little respite from the casino craziness but still relatively convenient access. I haven't stayed there in a couple of years (nor have I read any recent reviews), but I would suspect upkeep/service has suffered given the nature of the property and what happened to average room rates following the recession. And I certainly wouldn't pay a higher rate to have a kitchenette (which IIRC is frequently UNstocked and you have to request utensils etc. and that can be a pain) to save money on breakfast, which shouldn't cost that much in the first place.
Paris and Planet Hollywood should be good bets and meet your criteria.

That might also serve the function of
temporarily staving off my craving to head for the actual Paris for a few more months.
