Stringent quality controls, sterile factory kitchens all pre-cooked and re-heated to a very high temperature.
3-4 days???????? I can assure you from personal experience that a bad lunch put me and 2 others in hell inside of 8 hours.

Besides, food poisoning can simply involve flushing out the irritant. And for all the hygienic preparation of food, meat that lasts a year usually contains chemicals and toxins that don't go down well with everyone. How or why would it take more than a few hours for the body to detect and toss it out?

To be honest, I can't understand why any airline would serve food with a one year expiry date when it has a daily turnover? That the chemicals in it provoke the odd reaction is hardly surprising. You seem to think its not possible, given your emphasis on hygiene. Maybe it's an ingredient, not a biological entity?
