We were at Four Saesons Hong Kong right after Christmas in premier deluxe harbor view. Service was terrific even with very full hotel. Book restaurants in advance particularly the 2 Michelin star restaurants in hotel and ask for harbor view and they will accommodate. For food I don't think their Chinese Michelin 3 star is as good as others in Hong Kong, but Caprice their French is very good. Suggest you email concierge in advance and they will take care of everything. Some good restaurants in IFC next door too.
