I'll add to this list if I can think of any offers (and update this post when offers change).
In 2011, Amex did a really good deal on their Plat Cred - 800,000 MR points (53,333 miles) for $53,333 spending on any Amex merchant. One of my colleagues met the welcome offer requirments basically on one card slip (his wedding deposit) and basically earned for his honeymoon ticket to Australia. But their current welcome offer is limited to certain "everyday" merchants like Park'N'Shop, Wellcome, Mannings etc so it's perfectly useless for spending on big ticket items.

I also suggest using Diamond Dual Currency Unionpay for home spending after the welcome offers are exhausted cos $4/mile. But, I realise a lot of furnishing places take Visa only, I don't have any spending offers for them at present.

past offers:
(until 31 Oct 12) HSBC: 300RC for new cards from existing member spending $3,500 ($0.78/mile)
400RC for new cards from existing member spending $4,000 ($0.67/mile)
(convertable to AM with $300 annual redemption fee)
