You ask us to discuss "Is this an appropriate menu in First?" which is rather a leading question...we can see exactly what you want us to say.
In discussing it, I think it's important to consider a few factors - departure time, arrival time and flight time. Class of travel gets included here to an extent.
This flight leaves RUH at 08.00.
Therefore, I believe in first class it is perfectly appropriate to serve a hot breakfast with choice and multiple courses as the first meal.
I suspect breakfast is served aroundabout 09.00 local time.
This flight arrives LHR at 12.15.
Therefore, it could be argued that it's better not to have anything too substantial as it's still early in the afternoon.
Most people probably would like a second meal ~90 minutes out of London i.e. 4.5-5 hours after eating the first meal. 4.5-5 hours after my first meal, I tend to have a sandwich snacky lunch, especially if I've had such a nice hearty breakfast!
Additionally, passengers who prefer to eat something more substantial could always choose the Hara Bara chicken kebab, salmon quiche and sesame breaded prawns off the bistro menu.
As a final point of consideration, all F passengers are eligible to enjoy the Galleries Arrivals lounge on arrival in London, which is open until 14.00, so if you were particularly hungry, you could have chosen to eat something there.
