I used to work in an office building in the Huntington complex, which is across from the area where the Wingate, Courtyard, Residence Inn and Hilton Garden Inn are located.
The biggest news in the area is the recent opening of Bokamper's Grill (sports bar/restaurant) operated by one of the Miami Dolphins "Killer B's). It is located in the Home Depot shopping center just on the other side of I-75 from where the hotels are. I've not been to this second location yet, but a co-worker of mine has been there multiple times since the opening for game days and likes both the food and the media aspects (plenty of screens to watch different games, etc)
I'm not sure when your last trip was, but the free-standing Italian place in the Publix shopping center near the hotels went under and the building was taken over by a Mexican operation, Tulum Grill - I've not eaten there, but have eaten in the same company's Cancun Grill in Miami Lakes a while back, it wasn't bad at all.
FLLDL has already mentioned La Carreta and the cluster of eateries at the Shops at Pembroke Gardenss (you can take the back road from the hotels to the Shops without getting on the freeway) - Village Tavern, Brio Tuscan Grill, The Pub, etc. *decent/scceptable chain operations
For sushi in that area, I don't care for Ra, instead I go to Nami, which has a branch at Miramar Parkway and 127th (just west of the corner of Miramar Parkway and Flamingo Road).
