Cadogan1, I'm pleased I can help. Bunker Bay works well as a base for the local area, its reasonably central to everything, of course you will need a car. You should visit the Voyager estate winery when you are there.
In terms of your other questions, I suggest you post them on the Australia forum of Flyertalk, I'm certain there would be Margaret River experts there. I only went there for 2 nights a few years ago, and I'm not that familiar with the region. You'd get better results seeking wider opinions on some of these questions.
