Detailed rules for changing an award ticket (return leg)

Hello,

I will be flying YYZ-BKK, but I'm not sure how long I will stay in Thailand (and what my exact future plans are), and Delta charges the same for RT and OW awards, so I'm thinking of getting a YYZ-BKK-YYZ RT (returning in almost a year) and then changing the return leg once I'm there (I'm ok with the $150 change fee).

I found such a ticket in the "Low" award category. However, some points are not clear:

1) When I change the return leg of the ticket, if there's no "Low" award available for the date I want, can I pay the difference in miles and get a "Med"/"High" seat?

2) My understanding is that Delta allows open-jaw awards. But will I be able to change my regular ticket into an open-jaw one on the return leg (e.g. turn the BKK-YYZ leg into PEK-YYZ, or into BKK-SEA? I assume I won't be able to do both, e.g. change it to PEK-SEA?)
