Most wineries that I've been to will be happy to package up your purchase and make it fit for flying. It has been a while, but when I did weekends in Napa/Sonoma (flew in/out of OAK) and the Santa Ynez Valley (flew in/out of BUR), the agents seemed extremely used to dealing with wine. I don't remember signing a special release for either.
In my experience, if you have a pretty girl ask any of the male employees at any winery for a shipping box, you get one of those nice ones with the Styrofoam for free that will hold 12 bottles. It may be possible to get it without the pretty girl, but why tempt fate? I have checked hundreds of bottles and never lost one. If the special boxes are not available, I would just wrap in a trash bag and the surround with dirty socks and other soft stuff in your luggage.
