If I was seated in a restaurant and had coffee spilled on me, I would have an immediate apology from a manager and his business card with the address where to send the cleaning bill. Likewise, if a hotel room cleaner were to knock a bottle of soda over and stain my jeans, they would be sent out for cleaning, and then mailed to my home if I was checking out the next day. This is just basic. Nothing less should be expected when it happens in the air. Sure, it's a mistake. And mistakes should be rectified.
