I also echo getting Windows 7 for your PC environment, and using Apple ecosystem elsewhere, including iTunes. I'm indifferent to Windows or Apple for mobile ecosystem - the Windows/Nokia device looks pretty decent to me - get what works best for you.

For ripping - do it right from the start. I have not found iTunes that good for ripping, especially when it comes to CDs that aren't pristine. And please don't rip and permanently destroy your music by compressing it. Think about:
  1. Spend a small diem on dbPoweramp
  2. Rip to WAV or Apple Lossless
  3. Learn to get the album art sorted early in the piece
