Flying "a little higher" on an ILS approach is easier said than done, the glideslope is very sensitive and if the approach is not stabilised at a certain point (i.e. GS and LOC both within limits) airline procedures would generally require a missed. Ignoring your instruments, particularly at night can be rather dangerous. It's much more sensible to be vigilant for possible increased turbulence while continuing the approach and maybe slowing down a little bit.
