I had the Portobello Mushroom Sandwich on a SEA-JNU flight last year and really enjoyed it. The size of the portions (sandwich and salad) relative to the flight length and time of day seemed appropriate and the presentation was good. I think the salad was bulgar or barley. At the same time, it's not something that your everyday passenger would be likely to request and I should imagine that for many non-vegetarians, the idea of a mushroom sandwich is none too appealing.

Bottom line - it's a perfectly acceptable meal item but it would be better suited as secondary or even tertiary choice as part of a more comprehensive menu rather than being the only choice.
