I would probably put the first night my name, second night under spouse's name, then last back to my name.

Be prepared to check out fully then check back in.

Also the hotel may or may not do this for you. It clearly states in the terms that a stay is any consecutive nights whether a person checks out and then back in. So FYI it may not work. Hopefully the hotel won't mind and will let this slide.
