I have had nothing but fantatsic service on JAL, dating back to my days of being a no status courier riding in coach. The worst thing I've seen a JAL FA do is pick up my glass prior to refilling it. My mother would roll over in her grave, if she wasn't very much alive.
As for ANA, only flew on them once, transpac on an award ticket in coach (same traitorous award ticket, JalPak, so shut it!), very good flight. They do have a better coach seat and let me select an exit row which was a big plus. Food and service about the same, which is to say excellent.

I too never felt being 2nd class customer with my 10+ years of flying on JAL.
If there's a JMB Diamond asking for a glass of champaign and another passenger ask for something else. Of course the CA will give priority to the JMB Diamond. Just because they serve the Japanese or give priority to the Japanese over you, it doesn't mean it is solely because of your race.
