I wouldn't do one hour turns out of ORD or SFO, but that's just me. Are you trying to do more than one a day? Three per weekend or so? That's asking for it, imho.
AA will not put you up due to weather. AA might be willing to modify your schedule (say you got stuck in ORD and missed a turn - they "might" help you by deleting segments). Or they might not. You might get lucky with ORC (original routing credit) - you might not.
Hard to say. Leave yourself some time and watch the weather.

DelAAys can be just as bad in SFO as they are in ORD, but I suspect you know that.
