Generally speaking, do you believe that 30 miles/$1 is a good value? By that I mean, is it worth purchasing flowers for people that you had no intention to purchase flowers for if it wasn't for the airlines miles?

Watch the service fees. These fees don't earn miles and are often more than even a generous valuation of the miles you earn.
