I'm with you on this one. The options I saw were both chilled and, frankly, the existing on-board cold meals seem just as enticing (at up to 50% less expensive), plus they count towards the $200 AmEx plat airline credit since I have DL selected as my eligible airline for that program. I also didn't see any dessert listed.
I am actually pretty fond of both the turkey peppercorn ranch sandwich and the cuban sandwich from the current EATS menu. The only risk is availability of those, particularly if you're seated toward the back of the cabin. But I've only experienced two flights where the selections I preferred were sold out.
If they want to sell me a premium meal it's going to need to be warm, and substantially more interesting than a cold plate with no dessert.
