If you're booking an award ticket, I think you can do that by using the calendar, or perhaps "date flexible" option online. When the calendar appears, just click on your desired class of service at the top of the calendar. Initially it will display the class of service that you inputed on the previous page, but this is where you can change it. For a purchased ticket, you'll probably have to call.
