OP: you might consider a day trip to the Longsheng Rice Terraces (you can get a driver to take you to Ping An and wait for you). .
Unless you are really compressed on time, best to do Lonsheng or Longji for at least 1 overnight. That way you enjoy a great treat for the eye, that being the sunset and sun rise scenes.
