All of the PMDL fleet with IFE uses Matsushita/Panasonic. I also know the A330s use Panasonic IFE (System 3000i).
I'm pretty sure they removed whatever was originally providing the video for the projection systems on the 744's and it is now being driven by a 3000i (which is also used in the BE seats on the 744). I'm pretty sure I saw the Linux boot up screen on the projectors on my last 744 flight in coach. Don't know if the 752's and 753's have been converted to digital systems or not. I suspect not. The 753's were delivered in 2002/03, so their systems would not be that old.
