Herring isn't really a German breakfast staple in most parts, but since North Germany gets lots of Scandinavian tourists, it can be found on most breakfast buffets. I much prefer it to the rather boring farmed salmon.
Cured salmon only really tastes good when it's freshly prepared, maybe with some junipers added to the usual salt, sugar, dill and lemon. Also smoked fish begins to taste tired rather quickly.
The wonderful thing about herring is that when pickled it really lasts well provided it can be stored cool. And the taste is, especially to someone who has eaten it from early childhood, a great blend of sour and sweet notes.
