It depends really, if you're flying into HKG for a connection then you might wanna do 883. You have more time for the lounge, and there is also extra timing space just in case of any delays to the flight. If you have HKG as your final destination, then I'd pick 881, cause I'll have a few more hours at LA before flying out.
+1 for 883 when connecting, especially in the winter with all the strong headwinds. The 77As don't have to make tech stops in TPE/ICN anymore, but they can be late arriving. 881's arrival time at ~7:30am leaves little margin for delay when connecting to regional flights that depart at ~9am. As others have posted, 883 also gives you more time to shower and get a nice breakfast in the lounge.
