You should be fine doing this. Don't think about skipping the first LHR_AMS leg though as the rest of your itinerary will be cancelled. You also have to be cautious about checked baggage on the return leg. It will be checked automatically through to AMS and you won't really have a good reason to ask them not to when you check-in. So travel with hand-luggage only on the return.
