The answer is, it depends on the equipment.
All Air France equipment is angled lie flat. You and your wife will be able to get seats next to each other without any partitions between you. If you end up on Air France, try to route on the A380 JFK-CDG... it'll have the newest seats.
Currently, the DL equipment is likely recliner (763) or angled lie flat (330). Again, will be able to get seats next to each other without any partitions between you. By next summer, the 763s will likely have been converted to full lie flat similar to the 764. If you end up on one of those, you'll want the middle (B/C) seats. There will be a small table between you.
The current full lie flat fleet (764, 777) generally doesn't serve CDG. In fact, I think currently all service JFK-CDG and CDG-DTW is operated by AF.
