Tough call. I've been to both. The Four Seasons Sayan is an architectural marvel. The setting from their bar area looking into the Jungle is amazing. It is designed in a more modern way than the Amandari which looks like an authentic balinese village. Being right on the Ayung river at Sayan is great too. If you like spas, than definately the Four Seasons Sayan. They have a dedicated spa with many great treatments.
The big difference between the two is that one is more western oriented and modern (Four Seasons) and the other is more authentic and closely related to its environment (Amandari). The rooms at Sayan are more luxurious by western standards. The service is good at both but slightly better at Amandari as are all Aman Resorts.
If you've been to Bedawan Giri, I would choose Four Seasons Sayan. Amandari is too closely related to Bedawan Giri's design.
