You're right...I don't see 'em much anywhere else either.
Maybe it's because they're a good fit for a US transcon or midcon? Flights of 3,000-ish miles or less that don't have passenger loads that require a widebody....
I sort of prefer the A320 over the 757, especially if I'm in coach.
Europe seems to use the A320 for medium-hauls. Asia seems to use more widebodies...I flew a China Eastern A330 on PEK-SHA last week at 11PM at night and the thing was packed. Apparently they run 'em almost hourly. China Southern just took delivery of an A380 that they're going to start using domestically first.
