Each origin city has a separate list of available meals (typically about 8-10 choices). You quoted the entire list, most won't be available on any single flight. You can look up each city at the SQ web site to see what is available.
The very best choice is the Roast goose and pork meal, but it is only available for SQ2 (HKG origination flight). You won't be on that flight. Lobster thermidor is pretty good, and available from many cities. The veal chop is also good. Do select carefully, the "book the cook" meals are all different and cover a large range of quality. Some are half as good as others (they are offered to provide variety for the frequent flyers, not necessarily because they are good choices). In the past SQ would board a regular meal along with your special meal ... this is no longer done, they will not have a regular meal avaiable if you decide you don't like your special meal. Even in F, much less in J.
