Since you're 1K, the easiest thing to do would be to call UA Reservations 1K line and ask. No charge for 1Ks 'cuz United still likes you guys.
Beyond that you can do a search using standard awards and look at the relevant fare class for availability. Easier than that is to simply test-book for flights in Y (economy) with the relevant upgrade drop-down list checked. That will provide you with a list of flights for which upgrades
may be available. You can write down what looks good and then call reservations and make sure there's space available right then and take care of everything all at once.
You're probably aware that there are some significant co-pays for booking with miles too. Fewer $$$ with higher fare classes.
On the E+ seating issue, not sure why you're not seeing them when you book for two instead of one. But again, find what you like and call. 1K Res is generally pretty decent (my "one time exception" in life was my single year as a 1K, so I have some familiarity with such things).
