Am I right in thinking this will be short but do-able? I don't know the LAX airport at all: do we have to exit one terminal and go through security to another international terminal?

While I prefer more time, you should be OK. If I remember correctly, most domestic arrivals from the islands and international departures for LAX are in Termianl 7. In fact, I'm pretty sure I have arrived into Terminal 7 100% of the time for flights from Hawaii.
That said, I have no personal experience with this specific flight from LIH, however I travel between the islands and LAX a few times a year. For OGG or HNL departures, I seem to arrive into LAX early most of the time, but these are on overnight flights.
