Glasgow has wonderful museums, interesting food, varied history, easy access, and is frankly a beautiful city.

Shh about Cardiff!

Kansas City - again, wonderful museums, a preserved, walkable historic area, buildings reinvented but with character maintained.
Agree about Kansas City. It has a bit of a San Fran feel with the hills. Very historic. Lots of fountains and pretty things to see - great BBQ. Awesome arena (Sprint Center). Very underrated.
