I have ATT's iPhone international plan which gives me unlimited data worldwide on my iPhone. I therefore pack a voice only SIM or often just use a roaming SIM and trigger a callback to that phone from my iPhone. Sometimes I'll just make the call VOIP over 3g, but that is kind of hit and miss.
