I enjoy looking out the window for all the reasons you mentioned, but not everyone shares our curiosity. Many people I know view travel as simply time spent in a vehicle between point A and point B. The scenery outside holds neither mystery nor allure. For others, travel time is better made productive, catching up on reading, writing, or conversation. Personally, I view much of my travel time as an opportunity to get away from the treadmill of productivity.
