Going to Rome for just one night, was hoping to find a place where we could stay in just one room on SPG or HH points :/
The old advice is still very true today: look first at the website occupancy limits but don't "give up" until you call the hotel directly. For some reason, the USA hotel chains generally do a lousy job of accurately listing hotel room occupancy limits of their foreign hotels.
But here's another tip that may help you. Choice Hotel properties (while generally not as nice as Hilton and Starwood hotels) are often accomodating to families. And you can often use the base number of points for a family room. For example, at the very decent Comfort Hotel Bolivar in Rome, it's only 8000 points for a family room through November. Even buying the points at full price from Choice, it would be a good deal. An even better deal is buying some points at a discount through the annual Discover America promo in Spring.
