I flew this in May (LAX-HKG on the only flight then operating, 2 am departure) and I am sure there was a beef choice. The only thing I remember about the meal was the silly plastic covers, and that the food was better than I expected (which led to the thread about CX being as good as ever, maybe better). You can always special order a meal. CX does use a lot of seafood (something that I personally like) so you do miss out on at least half the menu.
