LOL - When I visited a pepper farm in Sarawak, they explained that it's the same peppercorn for both white & black pepper. As you noted, white pepper is from ripe red peppercorns, they soak raw harvested peppercorns in water and allow the seed cover to 'rot' off. For black pepper, unripe pepper corn is harvested and dried, the green seed coat turns black.
