French Sign Language (LSF) has been recognized by the French government as a language of France, so the travelers should have been covered. Also from your quote of the article it seems that there was some liaising going on during the boarding process (on paper in French, or with a hearing member of the party interpreting between French and LSF, I don't know) so ostensibly this could have continued on board.
