The best first class flight to Europe which the OP can get with AMEX points would be British Airways via London.

Another business class alternative would be bizbed on OpenSkies (again with BA Miles) This would avoid the stop in London. I haven't flown OpenSkies (so I can't opine on their service), but the fully flat bed would beat out the AF sloping version in my book.
