In France, Amex doesn't have direct access to your income information. Like any financial institution, it will look at your "Banque de France" profile only.

If you are employed, and the declared income in the application is not compatible with the job, Amex could ask for your latest salary or bank statements.

If your income is a bit short for the Platinum card (the minimum income in France is 80K Euros), I would suggest to apply for the Gold card first, use it a lot in the next months (travel related expenses if possible), and later ask for an upgrade.
