http://www.koreanair.com/, the fares are listed as "saver", "value", "quality", etc... with no indication of the corresponding fare code. Any ideas how these are related?

Excluded dates are dates when KE award tickets are not available ('blackout'). Re-fares, there are more fare codes than 'labelled' categories so you cannot be sure, especially in economy so if you want to book something you'd better call them first and check the fare code.
