You can either book through the AA website (which allows the connections and isn't as restrictive with the 120 minutes turnaround) or book the different legs on seperate PNRs. Of course, the danger is always that there is no guarantee of continuity in terms of missed connections, etc, but as all of your outbound flights will indeed be on the inbound aircraft, there shouldn't be a problem. I did this self-same trip in this way earlier in the year.

At AMS you get screened with your hand luggage at the gate, so very easy turnaround, and at JER you merely walk from one side of the airport to the other, just as easy though you do have to walk outside for a couple of hundred metres ... at least you'll get some fresh air!

Hope the booking(s) and the flight(s) go well ...
