You are not addressing OP's issue.

His problem now is he could not even book JFK as either a stopover or a destination, because LHR-JFK is NOT available. The only way he could have LHR-JFK for his date is to book it as LHR-JFK-YYZ because JFK is only available as a CONNECTION in this LHR-YYZ married segment.

If LHR-JFK is available, he can certainly do what you suggest - such as booking LHR-JFK stopover, then fly to HNL or ANC or some remote town in Alaska as he pleases.

However, right now his issue is he cannot get back to JFK without adding YYZ as his destination due to the married segment.

BTW, your return SJU-XXX-SFO can only fly to somewhere in Asia if you want to have SFO as your NA gateway.
