I think nearly everyone thinks that the -200 Envoy seats (Suites) are better than the -300, especially if you don't count row 1 on the -300 which has lie-flat horizontal seats.

The soft product is common across the -200 and -300 - menus, beverages, etc. I think the IFE has somewhat larger screens on the -200. As aztimm said, the crew can affect the service either way, good or bad.
