You will be hard pressed to find Fosters anywhere in Australia, aside from the most over touristed places in the Rocks etc. Local dark beers are relatively rare, probably because of the climate. The darker beers that come to mind are Sheaf Stout and Cooper's Best Extra Stout. They can be hard to get though and Guiness is usually the dark beer that most pubs will carry. If you don't mind sampling a lighter (colour) beers the Coopers Pale, Boags, James Squire. Beers tend to demarcate along state lines (Victoria/VB; NSW/Tooheys;QLD/XXXX;WA/Swan etc).

If you like photography I'd suggest checking out Kangaroo Valley and the Southern Highlands.
