Flight Classes & Oneworld Rules

I wished I had found this forum earlier. I have booked 5 Oneworld HONE4 tickets for our family in August using AA. Our route is LHR - SIN - BNE - CNS - SYD - HNL // OGG - LAX - XCHI - LHR and the flights have all been ticketed. Apologies but I don't know the shorthand so these questions are a bit longwinded.
1. I paid high season rate as our first segment is in Aug, but could I have done a flight MAN to ??? (somewhere in UK or europe) returning to LHR in April to start off the trip in low season and paying the low-season rate for the oneworld?
2. We didn't really want to include Asia, but realised that there wasn't a direct flight to Australia, so the SIN stopover is counted as one continent. Could I have booked a ONE3 that just had a couple of hours say in Singapore, without it counting as a continent?
3. Our tickets say L class, (we are in economy), but noticed that economy is normally M - anyone know what the difference is?
